projects in progress

Ok So I haven't posted anything in the last couple of days. I have been working on my knitting. I have several projects going at the same time.
1) Leighton's blanket that I am knitting.
2) My niece Alexa's blanket that I am knitting.
3) Jakayla's belt that I am knitting.
4)Jakayla's blanket that I am sewing. I still have to cut the jeans for that project.

Projects that I am going to start knitting next is Ellie's blanket.

Lately I have been on the run. Kids need to be here or there. Dr/Dentist Appointments for the us.


So keeping tracking my wear about and doings on Twitter.

Chocolate chip Pumkin Cookies

Ok These are I don't have a wor..... Never mind I do have a word for these but it isn't a pretty word for this.
It looks like something that would come from my cat or a dog if I had one.



I know that isn't nice but looks can be diceiving. As I was told today "I NEED MORE!"

My friend and her daughter want more. Heck I want more too. Its called CONTROL. LOL Or lack there of.
I don't have any and they are so soft and moist and just awesomeness to it.

So I have my marching orders and I need to make more as my friend refers them "The good crack cookies just without the crack"




Chocolate chip Pumpkin Cookies

2 Boxes of Spice Cake
1 lg can of Libby's Pumpkin
1 bag of mini chocolate morsels


Directions:

Preheat oven to 350 degrees.

Prepare cookies sheets with lightly coat with crisco/ flour spray.

Mix the spice cake and the pumpkin in a large mixing bowl until smooth.

Add the mini chocolate chips.

Bakes for 10 to 12 minutes. Till bottoms are lightly golden.

Let cool on wire rack.

Any type of chocolate chips work. It even works for those who don't want to put any in.

Peanut Butter Chocolate Cupcakes

Ok, So here are the birthday cupcakes that I made for my friend. Peanut Butter Chocolate Cupcakes. They came out like a devils food cake. Probably because I left them in the oven a little to long. Don't know.
I got this recipe off of cupcakesrecipes.com.
They were fun to make at 6 am. But not do not boil water while you are trying to make these. I don't know why I was boiling water. I think I wanted to add something to the top and needed to make my own double boiler. Either way I have not clue.
My pics as you can see aren't the greatest. I bounce from using my camera phone to using my new camera. Its not the greatest thing since sliced bread. But It gets the job done. LOL.

I used peanut butter as the icing. It was just too much pb for me and the birthday chick LOL.
She threw an idea at me. So I am going to try it maybe not this week or the next but it is an idea all the same.










Trying to make these while the kids are getting ready for school was an adventure. They like to eat them while they are still hot. Maybe that is why I keep baking in the morning. Easy breakfast for picky eaters. LOL.





Peanut Butter Chocolate Cupcakes

Ingredients

• 2 1/4 cups all purpose flour
• 1 1/2 cups sugar
• 1/2 cup creamy peanut butter
• 3 1/2 teaspoon baking powder
• 1 teaspoon salt
• 1/8 teaspoon baking soda
• 3 tablespoons baking cocoa
• 1 1/4 cups 2% milk
• 1 teaspoon vanilla
• 3 large eggs

Chocolate and Peanut Butter Cupcakes Recipe Directions

Preheat oven to 350 degrees. If desired, line cupcake pans with paper liners. You may also spray cupcake pas with a butter and flour combination spray that can be found in your local grocery store.

Combine all ingredients in a large mixing bowl. Mix at low speed for 30 seconds while scraping bowl. Mix at high speed for 3 minutes, scraping bowl every minute.

Spoon cupcake batter into liners until they are 1/2 to 2/3 full. You should have enough batter for 24-36 cupcakes.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 10 minutes in pans then move to wire rack to cool completely.

Frost anyway you choose.

My friend's idea was to use Pb, marshmallow fluff, and cream cheese.
I don't know its just an idea right now but I will figure out equations an the how much Later.

cupcakes that didn't make the grade


Ok here fruckcakes that didn't really make the grade. My friend loved them.
They resembled little puckered buts.
They were ok, I guess. Nothing to write home about though.

Strawberry cream filled. with strawberry whipped frosting.

working on many projects

I have 3 knitting projects that I am currently working on.
My son's blanket. My youngest daughter's blanket. My niece's blanket.
Then I have my oldest daughter's blanket that I am cutting out. I still have to cut the jeans for that project.

I have to put together a shelf that I bought 2 weeks ago.
My boyfriend hasn't gotten around to coming over to put it together and I am tired of waiting around.

wow

I hadn't realized that I hadn't blogged on here in a while.
I have been running around like a chicken with its head cut off.
Between the kids, dr appts for the kids and me, going to church, life-net groups, going out in to the community. I have kept myself pretty busy.
So as I am spending today hunting for the recipe for the ultimate dinner tonight. (The only night I can pretty much cook dinner for my kids this week)

Well here I am hunting and well now I am bored with still no prospects for dinner.
Well I am jumping ship so to speek.
